Very trendy at the moment, we use whole free range shoulders, we almost double the cooking time and roasted, very, very slowly, ensuring the meat falls off the bone, it is served in the traditional way with wraps or rolls, stuffing and apple-sauce. Or we offer – Southern-style slow cooked pork butts with slaw – Smoky barbecue flavour, served with fresh coleslaw, flat bread and sautéed red onions
